Savory Breakfast Egg Muffins with Sausage and Cheese 🧁


Ingredients

Main:

6 large eggs

1/4 cup milk

1 cup cooked sausage or ground beef (crumbled)

1 cup shredded cheddar cheese (or mozzarella)

1/2 cup chopped mushrooms (optional)

1/4 cup chopped onion (optional)

1/4 cup chopped bell pepper (optional)

Salt – to taste

Black pepper – to taste

Optional additions:

Chopped spinach

Olives

Fresh parsley


Instructions

  1. Preheat oven to 180°C (350°F).
  2. Prepare muffin tray: Grease a muffin tin or use paper liners.
  3. Cook sausage/beef: In a pan over medium heat, cook the sausage or ground beef until fully browned. Drain excess oil.
  4. Mix eggs: In a large bowl, whisk the eggs with the milk, salt, and black pepper.
  5. Add fillings: Stir in the cooked meat, cheese, mushrooms, onion, and bell pepper (or any vegetables you like).
  6. Fill cups: Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  7. Bake: Place in the oven and bake for 18–22 minutes or until the tops are golden and the eggs are set.
  8. Cool slightly: Let them rest for 5 minutes before removing from the tray.

Serving Tip:
Serve warm for breakfast or as a snack. They can be stored in the refrigerator for up to 3 days and reheated in the microwave.
