Rolled Omelette with Cheese and Vegetables Recipe
Ingredients:
5 large eggs
1/4 cup milk or cream
1 cup shredded mozzarella cheese
1/2 cup grated cheddar cheese
1 small onion, finely chopped
1 small bell pepper, finely chopped
1/2 cup mushrooms, sliced (optional)
2 cloves garlic, minced
2 tablespoons olive oil or butter
Salt, to taste
Black pepper, to taste
Paprika, to taste
Dried oregano or thyme (optional)
Fresh parsley, chopped (for garnish)
2 tablespoons mayonnaise or sour cream (optional topping)
Instructions:
1 Prepare the Egg Mixture
In a large bowl, crack the eggs and whisk them thoroughly until smooth and fluffy. Add the milk, salt, black pepper, paprika, and dried herbs. Whisk again until all ingredients are well combined.
2 Prepare the Vegetables
Heat one tablespoon of olive oil in a non-stick pan over medium heat. Add the chopped onion and garlic, and sauté for about 2 minutes until fragrant.
Add the bell pepper and mushrooms, and cook for another 3–4 minutes until soft. Remove from heat and set aside.
3 Cook the Omelette Base
In a large rectangular or wide non-stick pan, heat the remaining oil or butter over low to medium heat.
Pour in half of the egg mixture and spread it evenly to form a thin layer. Cook gently until the bottom is set but the top is still slightly soft.
4 Add the Filling
Sprinkle half of the shredded cheeses evenly over the surface. Add half of the sautéed vegetables on top.
5 Roll the Omelette
Carefully roll the omelette from one side to the other using a spatula. Push the rolled omelette to one side of the pan.
6 Repeat the Process
Pour the remaining egg mixture into the empty space, slightly lifting the rolled omelette so the liquid flows underneath.
Let it set, then add the remaining cheese and vegetables. Roll again to form a thick layered omelette.
7 Finish Cooking
Cook the rolled omelette for 2–3 minutes, turning gently to brown all sides evenly. This ensures the inside is fully cooked and the outside is golden.
8 Serve
Transfer the omelette roll onto parchment paper or a wooden board.
Drizzle with mayonnaise or sour cream if desired, sprinkle with fresh parsley, and slice into portions.
