Banana Bread Cake with Cream Cheese Frosting

For the Banana Cake:
1 ½ cups mashed ripe bananas (about 3–4 bananas)
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter (softened)

1 teaspoon vanilla extract
½ cup sour cream (or plain yogurt)

For the Cream Cheese Frosting:
200g (7 oz) cream cheese (softened)
½ cup unsalted butter (softened)
2–3 cups powdered sugar
1 teaspoon vanilla extract
1–2 tablespoons milk (if needed for consistency)

Step 1: Prepare the Oven and Pan
Start by preheating your oven to 180°C (350°F). Grease and line a round or rectangular baking pan with parchment paper to prevent sticking. This step ensures your cake comes out clean and perfectly shaped.
Step 2: Mash the Bananas
In a large bowl, mash the ripe bananas using a fork until smooth. The riper the bananas, the sweeter and more flavorful your cake will be.
Step 3: Mix Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, and salt. This helps distribute the leavening agent evenly throughout the batter.
Step 4: Cream Butter and Sugars
In another large mixing bowl, beat the softened butter with both granulated sugar and brown sugar until light and fluffy. This process usually takes about 2–3 minutes and is essential for a soft texture.
Step 5: Add Eggs and Vanilla
