Crispy Vegetable Patties



🥕 Ingredients:

2 medium zucchinis, grated

2 medium carrots, grated

1 medium potato, grated

1 small onion, finely chopped

2 eggs

3–4 tablespoons flour or breadcrumbs

A handful of fresh parsley, chopped

Salt and black pepper, to taste

Optional spices: garlic powder, paprika, or cumin

Oil for frying


👩‍🍳 Preparation Steps:

  1. Grate the vegetables (zucchini, carrots, and potato).
    Place them in a bowl and squeeze out all excess water.

This step keeps your patties firm and prevents them from falling apart.

  1. Add the onion, parsley, eggs, salt, pepper, and any spices you like.
  2. Stir in the flour or breadcrumbs little by little until the mixture becomes soft but easy to shape.
  3. Shape the mixture into small round patties using your hands.
  4. Heat some oil in a pan over medium heat.
    Fry the patties on each side until they become golden and crispy.
  5. Place them on a paper towel to remove any extra oil.
