Crispy Zucchini Patties Recipe
Ingredients
2 medium zucchinis, finely grated
3 large eggs
1 small onion, finely chopped (optional)
2 cloves garlic, minced
½ cup all-purpose flour
½ cup grated cheese (cheddar or mozzarella – optional)
2 tablespoons fresh parsley or green onions, finely chopped
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
¼ teaspoon turmeric (for color, optional)
Vegetable oil, for frying
Preparation Method
Start by washing the zucchinis thoroughly, then grate them finely using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze very well to remove excess water. This step is extremely important to ensure that the patties hold together and become crispy when fried.
Transfer the drained zucchini to a large mixing bowl. Add the finely chopped onion, minced garlic, and fresh parsley or green onions. Mix gently until all the vegetables are evenly combined.
In a separate bowl, beat the eggs until smooth. Pour the beaten eggs over the zucchini mixture and stir well so that everything is evenly coated. The eggs will act as a binder and give the patties a soft, fluffy interior.
Next, add the flour gradually while mixing. This will help absorb any remaining moisture and give structure to the mixture. If you are using cheese, add it at this stage and mix until fully incorporated.
Season the mixture with salt, black pepper, paprika, and turmeric. Stir again to distribute the spices evenly. The mixture should be thick enough to shape with your hands but still soft.
Heat a generous amount of vegetable oil in a non-stick frying pan over medium heat. Once the oil is hot, take a small portion of the mixture and shape it into an oval or round patty. Carefully place it into the pan. Repeat with the remaining mixture, leaving some space between each patty.
Fry the patties for about 3–4 minutes on each side, or until they turn golden brown and crispy. Avoid flipping them too often to prevent breaking.
Once cooked, remove the patties from the pan and place them on paper towels to absorb excess oil. Continue frying until all patties are done.
Serve the zucchini patties hot as a main dish, appetizer, or side dish. They pair perfectly with yogurt sauce, garlic dip, or a fresh salad.
