Soft and Fluffy Milk Bread Rolls Recipe
Ingredients
4 cups (500 g) all-purpose flour
1 cup (240 ml) warm milk (not hot)
2 ¼ teaspoons (7 g) instant dry yeast
¼ cup (50 g) granulated sugar
1 large egg (room temperature)
¼ cup (60 g) unsalted butter, softened
1 teaspoon salt
2 tablespoons vegetable oil
For brushing:
1 egg yolk
1 tablespoon milk
Optional topping:
Sesame seeds or poppy seeds
Instructions
Step 1: Activate the Yeast
In a small bowl, combine the warm milk, sugar, and yeast. Stir gently and let the mixture rest for 5–10 minutes until it becomes foamy. This step ensures the yeast is active and will help the bread rise properly.
Step 2: Prepare the Dough
In a large mixing bowl, add the flour and salt, then mix well. Create a well in the center and add the yeast mixture, egg, softened butter, and vegetable oil. Mix everything together until a soft dough begins to form.
Step 3: Kneading
Transfer the dough to a lightly floured surface and knead for 10–12 minutes until it becomes smooth, elastic, and slightly sticky. If using a stand mixer, knead on medium speed for about 8 minutes.
Step 4: First Rise
Place the dough in a lightly greased bowl and cover it with plastic wrap or a clean kitchen towel. Let it rise in a warm place for 1 to 1½ hours, or until doubled in size.
Step 5: Shaping the Rolls
Punch down the dough to release excess air. Divide it into equal portions (about 20–24 pieces). Shape each piece into a smooth ball and arrange them closely in a greased baking pan.
Step 6: Second Rise
Cover the pan and allow the rolls to rise again for 30–45 minutes until puffy and touching each other.
Step 7: Egg Wash
In a small bowl, mix egg yolk with milk. Gently brush the tops of the rolls and sprinkle sesame seeds if desired.
Step 8: Baking
Preheat the oven to 180°C (350°F). Bake the rolls for 20–25 minutes or until golden brown on top.
Step 9: Final Touch
Remove from the oven and brush with melted butter for extra softness and shine. Let cool slightly before serving.
