Savory Mini Bread Loaves
These savory mini bread loaves are soft on the inside, golden on the outside, and perfect for breakfast, snacks, or lunchboxes. Baked in silicone molds, they are easy to prepare and customizable with cheese, herbs, or vegetables.
Ingredients
3 large eggs
120 ml (½ cup) milk
80 ml (⅓ cup) vegetable oil
150 g (1 cup + 2 tbsp) all-purpose flour
10 g (2 tsp) baking powder
½ tsp salt
½ tsp black pepper
½ tsp paprika (optional)
100 g (1 cup) grated cheese (cheddar, mozzarella, or mix)
2 tbsp chopped parsley or herbs
1 small onion, finely chopped (optional)
1 small carrot, grated (optional)
Instructions
- Preheat the oven to 180°C (350°F).
- In a large bowl, whisk the eggs until light and foamy.
- Add milk and vegetable oil, then mix well.
- Gradually add flour, baking powder, salt, and spices. Mix until smooth.
- Fold in grated cheese, herbs, and optional vegetables.
- Pour the batter into silicone mini loaf molds, filling each about ¾ full.
- Bake for 25–30 minutes or until golden and a toothpick comes out clean.
- Let cool slightly, then remove from molds and serve warm.
Tips for Best Results
You can add tuna, olives, chicken, or mushrooms for variation.
Silicone molds do not need greasing.
Store in the fridge for up to 3 days or freeze for later use.
