2 cups all-purpose flour

1 tsp baking powder

¾ cup vegetable oil or melted butter

3 large eggs (room temperature)

1 cup milk or yogurt

1 cup raisins

½ cup dried apricots, chopped

Instructions (Step-by-Step)

  1. Preheat the oven to 170°C (340°F). Grease and line a round cake pan with parchment paper.
  2. Prepare the dried fruits
    Toss the raisins and dried fruits with 2 tablespoons of flour. This prevents them from sinking.
  3. Mix dry ingredients
    In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Mix wet ingredients
    In another bowl, beat eggs with sugar until light and creamy. Add oil (or butter), vanilla extract, and milk. Mix well.
