Pineapple Coconut Cream Dessert

Ingredients

Base Layer

1 box vanilla cake mix

3 large eggs

½ cup vegetable oil

1 cup water

Pineapple Layer

1 can (20 oz) crushed pineapple (do NOT drain)

½ cup granulated sugar

Creamy Filling

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 container (8 oz) whipped topping (Cool Whip), thawed

Topping

1½ cups sweetened shredded coconut, toasted

Extra whipped cream for garnish (optional)
