Fluffy Homemade Pancakes Recipe
Ingredients:
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 large eggs
1¾ cups milk (room temperature)
¼ cup melted butter (or vegetable oil)
1 teaspoon vanilla extract

Preparation Method :
To begin, place a large mixing bowl on your work surface and add the all-purpose flour, sugar, baking powder, baking soda, and salt. Using a whisk, mix all the dry ingredients together thoroughly. This step is very important to ensure that the baking powder and baking soda are evenly distributed, which will help the pancakes rise and become fluffy.
In a separate bowl, crack the eggs and whisk them lightly until smooth. Add the milk, melted butter, and vanilla extract, then whisk again until all the ingredients are well combined and the mixture looks creamy and uniform.
Slowly pour the wet ingredients into the bowl containing the dry ingredients. Using a spatula or whisk, gently mix everything together. Be careful not to overmix the batter; it is normal if there are a few small lumps. Overmixing can make the pancakes dense instead of soft and airy.
Allow the batter to rest for about 5–10 minutes. This resting time helps activate the baking powder and improves the texture of the pancakes, making them thicker and fluffier when cooked.
Heat a non-stick pan or griddle over medium heat. Lightly grease it with butter or a small amount of oil. Once the pan is hot, pour about ¼ cup of batter for each pancake onto the pan. You should see small bubbles forming on the surface after about 1–2 minutes.
When bubbles appear and the edges start to look set, carefully flip the pancake using a spatula. Cook the other side for another 1–2 minutes until golden brown and fully cooked inside.
Repeat the process with the remaining batter, greasing the pan lightly when needed. Stack the pancakes on a plate to keep them warm.
Serve the pancakes hot with your favorite toppings such as maple syrup, honey, fresh fruits, or powdered sugar. These pancakes are perfect for breakfast or brunch and have a soft, fluffy texture that melts in your mouth.
