Vanilla Bundt Cake with Creamy Vanilla Glaze
Ingredients
For the Cake:
3 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs, at room temperature
1 cup whole milk
1 tablespoon vanilla extract
For the Vanilla Glaze:
2 cups powdered sugar
3–4 tablespoons milk or heavy cream
1 teaspoon vanilla extract
Instructions
Begin by preheating your oven to 350°F (175°C). Grease a Bundt cake pan thoroughly with butter and lightly dust it with flour to prevent sticking. Set the pan aside.
In a medium bowl, whisk together the flour, baking powder, and salt. This step ensures that the dry ingredients are evenly distributed, which helps the cake rise properly and results in a light, tender texture.
In a large mixing bowl, beat the softened butter and granulated sugar using an electric mixer on medium speed for about 3–4 minutes, or until the mixture becomes pale, fluffy, and creamy. This step is very important, as it incorporates air into the batter and gives the cake its soft crumb.
Add the eggs one at a time, beating well after each addition. Make sure each egg is fully incorporated before adding the next. Stir in the vanilla extract, which will give the cake its classic and comforting flavor.
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients. Mix on low speed just until combined—do not overmix, as this can make the cake dense.
Carefully pour the batter into the prepared Bundt pan and smooth the top with a spatula. Gently tap the pan on the counter to release any air bubbles.
Bake the cake for 45–55 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the cake from the oven and allow it to cool in the pan for 10–15 minutes. Then carefully invert it onto a wire rack and let it cool completely.
Preparing the Vanilla Glaze
In a small bowl, whisk together the powdered sugar, vanilla extract, and milk until smooth and creamy. Adjust the consistency by adding more milk if needed—the glaze should be thick but pourable.
Once the cake has completely cooled, slowly pour the glaze over the top, allowing it to drip naturally down the sides of the cake. Let the glaze set for a few minutes before slicing.
