No-Bake Lemon Cream Dessert

For the crust:
2 cups crushed digestive biscuits (or graham crackers)
1/2 cup unsalted butter, melted
For the lemon filling:
1 can (397 g) sweetened condensed milk
1/2 cup freshly squeezed lemon juice
1 tablespoon lemon zest
1 cup heavy cream (or whipping cream), chilled
For the topping:
1 1/2 cups whipped cream (or whipped topping)
Extra lemon zest for garnish

Step 1: Prepare the crust
Start by crushing the digestive biscuits into fine crumbs using a food processor or by placing them in a sealed bag and crushing them with a rolling pin. Transfer the crumbs to a mixing bowl and pour in the melted butter. Mix thoroughly until the texture resembles wet sand.
Press the mixture firmly into the bottom of a baking dish or pan, making sure it is evenly distributed. Use the back of a spoon or a flat glass to smooth and compact the crust. Place it in the refrigerator for about 20–30 minutes to set.
Step 2: Make the lemon filling
In a large mixing bowl, combine the sweetened condensed milk with freshly squeezed lemon juice. Stir well until the mixture thickens slightly. Add the lemon zest to enhance the citrus flavor.
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the lemon mixture using a spatula. Be careful not to overmix, as you want to keep the filling light and airy.
Step 3: Assemble the dessert
Remove the chilled crust from the refrigerator. Pour the lemon cream filling over the crust and spread it evenly with a spatula.
Return the dish to the refrigerator and let it chill for at least 3–4 hours, or until the filling is fully set and firm.
Step 4: Add the topping
Once the dessert is set, spread the whipped cream evenly over the top. You can create decorative swirls or cut it into squares as shown in the picture. Sprinkle some fresh lemon zest on top for a bright and elegant finish.
