Strawberry Cheesecake Recipe
This Strawberry Cheesecake is rich, creamy, and topped with a fresh homemade strawberry sauce. It is perfect for birthdays, family gatherings, or any special occasion.
Ingredients
For the Crust
2 cups graham cracker crumbs (or digestive biscuits)
½ cup melted butter
2 tablespoons sugar
For the Cheesecake Filling
24 oz (680 g) cream cheese, softened
1 cup granulated sugar
1 cup sour cream
1 teaspoon vanilla extract
3 large eggs
2 tablespoons all-purpose flour
½ cup heavy cream
For the Strawberry Topping
2 cups fresh strawberries (chopped)
½ cup sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
¼ cup water
How to Make Strawberry Cheesecake
Step 1 – Prepare the Crust
- Preheat oven to 180°C (350°F).
- Mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture firmly into the bottom of a springform pan.
- Bake for 10 minutes, then let it cool.
Step 2 – Make the Cheesecake Filling
- Beat the cream cheese until smooth.
- Add sugar and mix well.
- Add sour cream and vanilla extract.
- Beat in eggs one at a time.
- Add flour and heavy cream and mix until creamy.
Pour the filling over the crust.
Step 3 – Bake the Cheesecake
- Bake at 160°C (320°F) for 50–60 minutes.
- The center should be slightly jiggly.
- Turn off oven and leave cheesecake inside for 1 hour.
- Refrigerate for at least 4 hours or overnight.
Step 4 – Make Strawberry Sauce
- In a saucepan, add strawberries, sugar, and lemon juice.
- Cook on medium heat for 5 minutes.
- Mix cornstarch with water and add it.
- Cook until thick.
- Let cool.
Step 5 – Assemble
Pour the strawberry sauce over the chilled cheesecake.
Decorate with fresh strawberries if desired
