Baked Blueberry Cottage Cheese Cups


These baked blueberry cottage cheese cups are soft, creamy, and lightly sweet with bursts of juicy blueberries in every bite. They are perfect for breakfast, dessert, or even a healthy snack. Made with simple ingredients, these individual baked cups have a fluffy texture similar to cheesecake but are lighter and naturally rich in protein.
They are easy to prepare and can be served warm or chilled. The golden top combined with the vibrant blueberry swirls makes them visually beautiful and incredibly delicious.

1 ½ cups cottage cheese (full-fat or low-fat)
2 large eggs
⅓ cup granulated sugar (or honey/maple syrup)
1 teaspoon vanilla extract
2 tablespoons all-purpose flour (or cornstarch for gluten-free option)
½ teaspoon baking powder
1 cup fresh blueberries (plus extra for topping)
1 tablespoon lemon zest (optional, for freshness)
Pinch of salt
Butter or oil for greasing

Preparation Method
Step 1: Preheat the Oven
Preheat your oven to 180°C (350°F). Lightly grease your ramekins or small glass jars with butter or oil to prevent sticking.
Step 2: Prepare the Cottage Cheese Mixture
If you prefer a smooth and creamy texture similar to cheesecake, blend the cottage cheese in a blender or food processor until smooth.
If you like a slightly textured result, you can skip blending.
In a large mixing bowl, combine the cottage cheese, eggs, sugar, and vanilla extract. Whisk until well incorporated.
Step 3: Add the Dry Ingredients
Add flour, baking powder, salt, and lemon zest. Mix gently until the batter becomes smooth and slightly thick.
Step 4: Add the Blueberries
Fold in most of the blueberries carefully to avoid crushing them. Keep a few aside for topping.
Step 5: Fill the Cups
Divide the mixture evenly into the prepared jars or ramekins, filling them about ¾ full.
Top each cup with a few extra blueberries.
Step 6: Bake
Place the jars on a baking tray and bake for 20–25 minutes, or until the tops are golden and slightly firm in the center.
The cups will rise slightly while baking and settle once cooled.
Step 7: Cool and Serve
Allow them to cool for at least 10–15 minutes before serving.
They can be enjoyed warm or refrigerated for a firmer texture.
