Pineapple Chicken Foil Packets

2 boneless, skinless chicken breasts
1 cup fresh pineapple chunks
1 zucchini, sliced into rounds
1 red bell pepper, sliced
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon olive oil
2 cloves garlic, minced

Start by preheating your oven to 200°C (400°F). While the oven is heating, prepare all your ingredients. Slice the zucchini into thin rounds, cut the red bell pepper into strips, and chop the pineapple into bite-sized chunks if you are using fresh pineapple.
Next, in a small bowl, prepare the sauce by mixing the soy sauce, honey, olive oil, minced garlic, and grated ginger. Stir well until everything is fully combined and the mixture becomes smooth and slightly glossy.
Take two large sheets of aluminum foil and place them on a flat surface. In the center of each sheet, arrange a layer of sliced zucchini and red bell peppers. These vegetables will act as a base and help keep the chicken juicy and flavorful during cooking.
Place one chicken breast on top of the vegetables in each foil sheet. Season the chicken with salt and black pepper according to your taste. Then, generously spoon the prepared sauce over each chicken breast, making sure it coats the surface well.
