1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
1 teaspoon dried thyme (optional)
½ teaspoon black pepper

Instructions
Step 1: Prepare the Potatoes
Preheat your oven to 375°F (190°C).
Wash and slice the potatoes into evenly sized wedges or thick slices. Arrange them in a greased baking dish.

In a pan over medium heat, add butter and olive oil.
