Chocolate Oatmeal No-Bake Bars



These Chocolate Oatmeal No-Bake Bars are the perfect combination of rich chocolate, creamy peanut butter, and crunchy oats. They are incredibly easy to prepare, require no oven at all, and make a delicious treat for dessert, snack time, or even a quick energy boost. With their soft yet slightly crunchy texture and deep chocolate flavor, these bars are guaranteed to become a favorite in your kitchen.


Ingredients


For the oat base and topping:
3 cups rolled oats
¾ cup unsalted butter
½ cup brown sugar
¼ cup granulated sugar
¼ cup milk
1 teaspoon vanilla extract
A pinch of salt
For the chocolate layer:
1 cup milk chocolate chips
½ cup creamy peanut butter


Instructions
Begin by preparing a medium saucepan and placing it over medium heat. Add the butter, brown sugar, granulated sugar, and milk. Stir the mixture gently and continuously until the butter has completely melted and the sugars are fully dissolved. Allow the mixture to come to a gentle boil, then let it simmer for about 1–2 minutes, stirring constantly to prevent sticking or burning.
Remove the saucepan from the heat and immediately add the vanilla extract and a pinch of salt. Stir well to combine. Next, gradually add the rolled oats to the warm mixture, mixing thoroughly until all the oats are evenly coated. The texture should be thick, slightly sticky, and easy to press into a pan.


Prepare a square baking dish by lining it with parchment paper, leaving some overhang on the sides for easy removal later. Press half of the oat mixture firmly into the bottom of the pan, creating an even and compact layer. Use the back of a spoon or a spatula to smooth it out.
Now it’s time to make the rich chocolate filling. In a heatproof bowl, combine the chocolate chips and peanut butter. Melt them together using a microwave in short intervals (about 20–30 seconds at a time), stirring between each interval, or by placing the bowl over a pot of gently simmering water. Stir until the mixture is completely smooth, glossy, and creamy.
Pour the chocolate and peanut butter mixture evenly over the oat base, spreading it carefully to reach all corners of the pan. Once the chocolate layer is smooth and level, gently press the remaining oat mixture on top, creating the final layer. Do this carefully so the chocolate layer stays intact underneath.
Place the pan in the refrigerator for at least 2 hours, or until the bars are fully set and firm. Once chilled, lift the dessert out of the pan using the parchment paper, place it on a cutting board, and slice it into neat squares.
Serving and Storage Tips
Serve these bars chilled or at room temperature for the best texture. They pair wonderfully with a cup of coffee or tea and make an excellent make-ahead dessert. Store them in an airtight container in the refrigerator for up to one week.
