Creamy Garlic Chicken with Broccoli and Rice
Ingredients
For the Chicken:
2 large boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic (minced)
1 teaspoon paprika
1 teaspoon Italian seasoning
½ teaspoon black pepper
½ teaspoon salt
For the Broccoli:
2 cups fresh broccoli florets
½ teaspoon salt
¼ teaspoon black pepper
For the Creamy Garlic Sauce:
2 tablespoons butter
3 cloves garlic (minced)
1 cup heavy cream
½ cup grated Parmesan cheese
½ teaspoon black pepper
½ teaspoon salt
½ teaspoon dried parsley (or 1 tablespoon fresh chopped parsley)
For Serving:
2 cups cooked white rice
Instructions
Step 1: Prepare the Rice
- Cook the rice according to package instructions.
- Set aside and keep warm.
Step 2: Cook the Broccoli
- Steam or boil the broccoli for 3–5 minutes until tender but still bright green.
- Season with salt and black pepper.
- Set aside.
Step 3: Cook the Chicken
- Season the chicken breasts with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat.
- Add the chicken and cook for 5–7 minutes per side until golden brown and fully cooked.
- Add minced garlic during the last minute of cooking.
- Remove from heat and let rest for 5 minutes.
- Slice the chicken into strips.
Step 4: Make the Creamy Garlic Sauce
- In the same pan, melt butter over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in heavy cream and bring to a gentle simmer.
- Add Parmesan cheese, salt, pepper, and parsley.
- Stir until the sauce thickens (about 3–5 minutes).
Step 5: Assemble the Dish
- Place cooked rice in a bowl.
- Add steamed broccoli on one side.
- Arrange sliced grilled chicken on top.
- Drizzle generously with creamy garlic sauce.
- Garnish with extra parsley if desired.
Tips
You can substitute brown rice or cauliflower rice for a healthier option.
Add chili flakes for a spicy version.
For extra flavor, marinate the chicken for 30 minutes before cooking.
