For the Meatballs
500 g (1 lb) ground beef
1/2 cup breadcrumbs
1 egg
2 cloves garlic, minced
1 small onion, finely chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon chopped parsley
1 tablespoon olive oil (for frying)
For the Casserole
300 g (10 oz) egg noodles
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Fresh chopped parsley (for garnish)
Instructions
Step 1: Prepare the Meatballs
In a large bowl, combine ground beef, breadcrumbs, egg, garlic, onion, salt, pepper, paprika, and parsley. Mix well until fully combined. Shape into small meatballs.
Heat olive oil in a pan over medium heat and fry the meatballs until browned on all sides. They don’t need to be fully cooked. Set aside.
Step 2: Cook the Noodles
Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions until al dente. Drain and set aside.
Step 3: Make the Creamy Sauce
In a saucepan, melt butter over medium heat. Add flour and whisk for 1 minute. Gradually add beef broth while whisking to avoid lumps. Stir in heavy cream, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Cook until the sauce thickens.
Step 4: Assemble the Casserole
Preheat oven to 180°C (350°F).
In a greased baking dish, spread the cooked noodles evenly. Place the meatballs on top, then pour the creamy sauce over everything.
Step 5: Bake
Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until bubbly and lightly golden on top.
Step 6: Garnish and Serve
Sprinkle fresh chopped parsley on top. Serve hot and enjoy!
